About:

Kalakand is an exceptional Indian dessert that has its origins in the state of Rajasthan. It is made out of solidified, sweetened milk and paneer. Kalakand has its own fan base. in this recipe, we have tried to give it a chocolate blueberry modification.

Ingredients:

  • 2 filo sheets
  • 10 gms butter
  • 15 gms blueberry
  • 60 gms kalakand
  • 30 gms carrot
  • 30 gms sugar
  • 30 ml saffron water
  • 10 gms whole fennel
  • 1 gm silver work
  • 10 ml rabri paste
  • 10 ml chocolate ganache
  • 5 gms pistachios

Procedure:

  1. Apply melted butter on both of the filo sheets and paste it on top of each other
  2. fill blueberry mix with kalakand in the middle of the sheet
  3. bake it at 200 degrees till a light brown color is visible in the top
  4. heat saffron water in a pan and sauté carrots in it until they become soft. then add whole fennel at first and sugar at the end. allow the mixture to cool down
  5. put rabri paste at the bottom of the plate and make two swirls of chocolate ganache around it
  6. put the carrot mix in the middle and warm kalakand potli on the top of it
  7. lastly, garnish it with silver varq and pistachios.
