(Riya Singh, Intern Journalist): To make Firni you will need 1 ltr milk (full cream), 4 tbsp of basmati rice, 6 tbsp of sugar, 1 tsp of cardamom powder and a few chopped almonds.
Method:
- Soak the rice in water for about 1 hour.
- Drain all the water and powder the rice in a mixer.
- Add half a cup of cold milk to the rice powder and make a paste.
- Boil the rest of the milk and gently stir in the rice paste.
- Cook for about 15 minutes on a slow flame, stirring continuously.
- Add the sugar and cardamom powder and simmer for a few minutes.
- Cold and serve in earthenware containers. Garnish with chopped almonds.
