Ingredients:
• 2 pounds boneless, skinless chicken breast, cut into 1-inch cubes
• 1/4 cup yogurt, plus more to serve, if desired
• Juice and zest of 1 lemon
• 1 teaspoon ground fenugreek seed (optional)
• 1 (15-ounce) can tomato sauce
• 1 teaspoon fresh ginger, grated
• 3 tablespoons garam masala
• Salt, to taste
• 2 red chiles, such as Fresno, sliced and divided use
• 1 (15-ounce) can coconut milk
• 2 cups chicken broth or water
• 1 small head cauliflower, florets cut into bite-size pieces
• 1 small onion, finely diced
• 4 cloves garlic, minced
• 11/2 cups jasmine, basmati or other white rice
• 1/4 cup chopped cilantro, to serve
Process:
Add the chicken, yogurt, lemon zest and juice to a bowl and stir to combine. Let the meat marinate for at least 15 minutes or up to 1 hour.
Heat oven to 375 degrees. In a second large bowl whisk together the fenugreek, tomato sauce, ginger, garam masala, salt, and half the sliced chiles. Stir in the coconut milk and broth until combined. Stir in the cauliflower, onion, garlic, rice, and marinated chicken.
Pour the mixture into a greased 9-inch by 13-inch casserole dish and bake until the liquid has absorbed, the rice is tender and the chicken cooked through 30-40 minutes. Serve the casserole garnished with the remaining chile slices, cilantro, and a drizzle of yogurt if desired.
