AKSHI KAMBOJ (INTERN JOURNALIST)
About:
Laal maas is a very popular non-vegetarian Rajasthani dish. It is a mutton curry prepared with lots of spices and ghee. Traditionally, it was made from wild game meat as the Rajas who went on hunting expeditions used to eat the meat they brought back. It is a kind of dish that should not be missed by any non-veg lover out there. Here’s an easy and quick recipe of laal maas that you can try at home!
Ingredients:
- 600 gms of mutton
- 3 black cardamoms
- 4-5 green cardamoms
- 2 tsp cumin powder
- 3-4 cloves
- 150 ml oil
- 5 mathania whole red chilly
- 200 gms onions
- 2 tbsp ginger-garlic paste
- 1 tbsp turmeric paste
- 2 tbsp mathania paste
- salt (acc. to taste)
- 200 gms yogurt
- lemon wedges and coriander sprig (for garnishing)
- 1 inch stick cinnamon
- 1 bay leaf
Procedure:
- Heat oil in a non stick pressure cooker and to it, add black and green cardamoms, cinnamon, cloves, whole mathania and bay leaf. let all the dry spices cook until you can smell their fragrance.
- now to the sautéed spices, add onion and wait till they turn light brown. Now add the ginger-garlic paste and sauté for 5 minutes.
- Now add the lamb pieces to the mixture and cook it for 10-15 minutes until the meat is seared properly.
- after the lamb is cooked properly, add turmeric powder, mathania paste and salt (as per taste) to it.
- Add whisked yogurt into the lamb and sauté it on high flame for 10 minutes. Now simmer the flame and let the mutton cook slowly.
- Now the lamb is cooked, transfer it to a serving bowl and garnish it with coriander sprigs and lemon wedges.
