Ingredients:
1 cup bajra flour, 5 tbsp curd, ¼ cup butter, 4 tbsp jaggery, 1 tsp baking powder, ½ cup milk, ¾ cup chopped dark chocolate, ½ tsp instant coffee powder, 1 tbsp hot water, 2 tsp cocoa powder, 2 tbsp roasted pistachios and orange zest or half an orange.
Method:
- Melt dark chocolate and butter, mix and let cool. Once cool, add jaggery, milk and curd and whisk well.
- In a separate bowl mix instant coffee powder and warm water and add that to the dark chocolate mix.
- In another bowl, mix the dry ingredients.
- Add the dry ingredients mix to the dark chocolate mix and fold well. Then add orange zest and roasted pistachios to the batter.
- Pour batter into a greased cake tin and bake for 35 to 40 minutes at 180 degrees centigrade in a preheated oven.
