Ingredients:

1 cup bajra flour, 5 tbsp curd, ¼ cup butter, 4 tbsp jaggery, 1 tsp baking powder, ½ cup milk, ¾ cup chopped dark chocolate, ½ tsp instant coffee powder, 1 tbsp hot water, 2 tsp cocoa powder, 2 tbsp roasted pistachios and orange zest or half an orange.

Method:

  1. Melt dark chocolate and butter, mix and let cool. Once cool, add jaggery, milk and curd and whisk well.
  2. In a separate bowl mix instant coffee powder and warm water and add that to the dark chocolate mix.
  3. In another bowl, mix the dry ingredients.
  4. Add the dry ingredients mix to the dark chocolate mix and fold well. Then add orange zest and roasted pistachios to the batter.
  5. Pour batter into a greased cake tin and bake for 35 to 40 minutes at 180 degrees centigrade in a preheated oven.
