(Riya Singh, Intern Journalist): To prepare the dessert, you’ll need 1 cup biscuit crumbs, 1/3 cup broken walnut pieces, ½ cup unsalted butter, a pinch dry ginger powder, 2 mangoes (pureed), 4 tbsp thick curds, cream cheese, ¾ cup castor sugar, ½ cup fresh cream, a few mango slices and a few walnut halves.
Method:
For the crust,
- Grease a 200 mm. (8’’) loose bottomed tin.
- Mix the biscuit crumbs, walnut pieces, butter and ginger powder very well.
- Press evenly in the cake tin. Chill until firm.
For the filling,
- In a blender, liquidize the mangoes, curds, cream cheese, and sugar to a thick puree.
- Whip the cream till soft peaks form and mix gently with the above mixtures.
How to proceed:
- Pour the filling mixture on the set crust and refrigerate till set.
- When set, unmould carefully.
- Garnish with mango slices and walnut halves. Serve chilled.
