(Riya Singh, Intern Journalist): To prepare this, you will need 100 gms tender shelled corns, 2 tsp methi powder, 100 gms grated cottage cheese, 25 gms chopped ginger, 2 tsp coriander chopped, 2 green chilies chopped, 100 gms boiled potato grated, 2 tsp lime juice, a pinch of turmeric powder, a pinch of red chili powder, 2 tsp toasted white and black sesame seeds, 2 tbsp bread crumbs, salt to taste, papad and coriander sprig

Method:

  1. Pre-heat the microwave and grill for 10 minutes at 180 degrees Celsius.
  2. In a mixing bowl, mix all the ingredients together till it attains a binding consistency. Ensure that it doesn’t get mushy.
  3. Check for seasoning; take a little mix to form a ball using fingers and palm together.
  4. Now firmly bind the mix around the skewer using fingers and your upper palm.
  5. One can use wooden skewers, but first, dip them in water before you proceed.
  6. Microwave at ‘high’ power for 2 minutes, then grill for 5 minutes or till done to your satisfaction.
  7. Lay a plate underneath to catch the drippings.
  8. If you don’t have the grill facility, then lay the skewers on a plate and microwave on ‘high’ power for 2 minutes on each side.

Serve hot with chutney of your choice, garnished with coriander and papad.
