One of the tasty and easy snacks is Mexican spicy corn. It takes you just 5 minutes to prepare, and three minutes to cook. The Ingredients used are very less and easily available at home too.

Mexican spicy Corn

Ingredients: 1/2 cup corn kernels, 1/2 cup onions, chopped, 1/4 cup capsicum, chopped 1-2 green chilies, 1/2 tablespoon chili powder, 1 tablespoon tomato ketchup, 1/4 teaspoon dried oregano(Can be skipped in case you don’t want to), 1 tablespoon butter and salt to taste.

Method: Now the process is very simple!

  1. Combine the butter, onions, and capsicum in a microwave-safe bowl and microwave on high for 2 min(can be done on a stove)
  2. add the corn, green chilies, chili powder, ketchup, and salt and mix well. microwave high for 1 more minute.
  3. Add oregano and mix well
  4. Spoon this mixture onto the cream crackers or the nacho chips.
  5. Serve immediately, garnished with coriander leaves and have it your way
