One of the tasty and easy snacks is Mexican spicy corn. It takes you just 5 minutes to prepare, and three minutes to cook. The Ingredients used are very less and easily available at home too.
Ingredients: 1/2 cup corn kernels, 1/2 cup onions, chopped, 1/4 cup capsicum, chopped 1-2 green chilies, 1/2 tablespoon chili powder, 1 tablespoon tomato ketchup, 1/4 teaspoon dried oregano(Can be skipped in case you don’t want to), 1 tablespoon butter and salt to taste.
Method: Now the process is very simple!
- Combine the butter, onions, and capsicum in a microwave-safe bowl and microwave on high for 2 min(can be done on a stove)
- add the corn, green chilies, chili powder, ketchup, and salt and mix well. microwave high for 1 more minute.
- Add oregano and mix well
- Spoon this mixture onto the cream crackers or the nacho chips.
- Serve immediately, garnished with coriander leaves and have it your way
